Southern Fried Chicken

I start with Chicken Thighs (take the skin off) This is the best to fry
In a Bowl I put 1 cup Flour 1/2 tsp salt and 2 Tb.. Sugar Italian seasoning

In Pan I heat Olive oil (I use a big deep Frying pan)

Roll Chicken in Flour and put in Hot Pan and put lid on and fry on Med until golden flip over and repeat

After frying is all done take chicken out and use the remaining flour to make the gravy for the Potatoes, Mix into the pan frying with the drippings and add water salt and season to taste stir until thick and serve over chicken and potatoes I usually serve with Green Beans made country style.
